Food Allergies

I've been planning/praying/hoping to volunteer long-term with Mercy Ships for a few years now. I have been for short-term service twice now, and always feel that my time has been too short.
I just had the thought that my daughter, who is 10 years old, has a food allergy to tree nuts. She has an epi-pen, though we've not had to use it yet. Usually liquid diphenhydramine is enough to control her reaction when exposed to cross-contamination. I don't remember there being any tree nuts specifically in the food served on board, but I also don't have any food allergies, myself. So I wasn't looking for them, either. Is there someone that works in the galley or otherwise that might be able to help me out with this information? Is it something that would limit our ability to serve on board as a family? Thank you!
